Soybean Rice & Lentil Salad   

Ingredients:

1 15-oz. can whole soybeans, drained
1 c. cooked brown rice
1 c. canned kidney beans, drained
1/2 c. canned lentils, drained
1/4 c. soy ranch dressing
1/8 c. chopped red onion
4 c. torn red leaf lettuce

Directions:

Combine ingredients in a large bowl, except the lettuce. Marinate for 1 hour in the refrigerator. Serve over lettuce. Serves 4.

Calories per serving: 300; protein: 29 grams; fat: 9 grams; carbohydrate: 39 grams; cholesterol: 0 milligrams.
