This cooling condiment, similar to Greek tzatziki, is often served alongside spicier dishes to cool the palate. Be sure to use long, thin English cucumbers.
1½English cucumbers
¼ cup fresh mint or cilantro leaves, chopped
juice of 1 lemon or lime
¼ teaspoon ground cumin
¼ teaspoon coriander
½ red onion, chopped (optional)
½ teaspoon ginger (optional)
½ (13.66-ounce) can full-fat coconut milk (stirred to combine water and cream),
or ½ cup raw cashews soaked in ¾ cup water for at least
30 minutes
salt, to taste
• Grate cucumber (unless they are waxed, there is no need to peel first). Squeeze out excess moisture.
• If using coconut milk, beat with a fork or whisk until smooth. If using cashews, blend with soaking water.
• Combine all ingredients, and mix until combined. Add salt to taste just before serving.
