Ingredients:
1/2 lb. dry lima beans
1/4 bunch parsley, chopped
2 cloves garlic, minced or pressed
1 bunch green onions, sliced
2 large carrots, sliced
2 T. olive oil
1 lemon, juiced
1/8 t. salt
Directions:
Soak lima beans overnight. Drain and place in a medium-sized bowl; add vegetables, olive oil, lemon juice, and salt. Serve chilled. Serves: 4.
