If you love roasted garlic and really good black olives, then you can view this recipe as yet another great way to indulge in these heavenly foods. Black olive tapenade can be found on the condiment aisle of the grocery store or made from scratch.
• 1 large flour tortilla
• 1/3 cup roasted garlic hummus
• 1/3 cup black olive tapenade
Directions:
Heat a large, ungreased skillet over medium heat. Lay the flour tortilla flat in the pan, and using the back of a spoon, spread half with the hummus, and the other half with the black olive tapenade. Cook for about a minute and a half, and fold the hummus half over the tapenade half. Gently press down on the top of the quesadilla with a spatula to “glue” the two sides together. The outside of the tortilla should be golden brown but not crispy. Cook either side longer if needed, even after folding in half. Slide out of the pan onto a plate and serve immediately.
