Ingredients:
2 lg. tomatoes, chunked
1/4 c. lemon juice
1/4 c. cilantro, diced
1/2 c. cucumber, coarsely chopped
1/2 onion, diced
1/4 c. sliced olives
Directions:
Combine all ingredients. Allow to marinate at least one hour to develop flavor. Serve chilled. Serves: 6.
