Ingredients:
1/2 c. spelt flour
1 1/2 t. McKay’s Beef seasoning
1 1/2 t. McKay’s Chicken seasoning
1 1/2 t. vege-sal
1/4 t. onion powder
1/8 t. garlic powder
1/4 c. Brewer’s Yeast Flakes
1 lb. tofu (rinsed, drained)
2 T. olive oil
4 slices soy cheese
4 6-inch whole-wheat sub buns
Vegenaise (optional)
1 head green leaf lettuce
4 med. fresh tomatoes
2 c. olives, sliced
2 med. cucumbers
1 c. lemon pickles (optional)
2 med. yellow peppers
1 med. red sweet onion
Directions:
Mix together spelt flour, McKay’s beef and chicken seasonings, vege-sal, onion powder, garlic powder, and Brewer’s Yeast Flakes. Slice the tofu into 12 half slices and dip in seasoned flour. Put olive oil in a nonstick skillet and fry the tofu slices until golden brown and slightly crisp. Turn over and fry the other side. Place half a slice of soy cheese on each piece of tofu. The cheese will only slightly melt. Spread each sub bun with Vegenaise, and place the three half slices of tofu on each sub. Layer the rest of the ingredients in any order.
Yields: 4 6-inch subs.
