This is a simple leave-it-and-go recipe for the slow cooker. Mix everything up and forget it until dinnertime! Serve over brown rice.
½ medium onion, chopped
2 rounded teaspoons garlic paste
2 rounded teaspoons grated ginger
or ginger paste
1 (6-ounce) can tomato paste
1–2 rounded tablespoons mild curry powder
1 teaspoon ground cumin
4 cups water
1 (13.66-ounce) can coconut milk
1 cup dried red lentils
2 teaspoons salt, or to taste
• Combine all ingredients in slow cooker. Cook on high for 4–6 hours, or on low for 6–8 hours.

Look for garlic paste and ginger paste in the refrigerated area of the grocery store’s produce section.
