Ingredients:
2 c. fresh apricots, pitted and sliced
2 c. fresh strawberries, halved
1 c. kiwi fruit, pared and sliced
2 T. apricot nectar
2 T. lemon juice
1/4 c. unsweetened coconut flakes, lightly toasted
1 T. fresh mint
Directions:
In a large bowl, combine all ingredients; toss. Serve chilled. Serves: 5.
